<h5><b>Historical Background</b></h5>
<p>In recent years, Chia seeds have experienced a wild surge in popularity amongst those seeking optimal nutrition and health. Valued as an energy source for athletic endurance, Chia was brought to the attention of modern humanity through the astounding physical feats of the Tarahumara people. There exists in the south-western United States, a gruelling 200 mile race that attracts elite endurance athletes from around the world.</p>
<p>During one of these such races, a fifty-one year old Tarahumara man named Ciraldo Chacarito, came to the race as he was, without any prior training or conditioning, and outlasted some of the world’s finest young athletes with the most advanced technology of running shoes and professional physical trainers, to win the race! His secret: The consumption of Chia seeds!</p>
<p>The Tarahumara people were known to travel on long journeys, across desert and mountains, to trade with the people of the Pacific Coast taking with them only a pouch full of Chia Seeds as their sustenance. Somehow, Chia was able to nourish them for the long distance, and they ran most of the way. Chia seeds are one of the most nourishing, energy-giving, endurance sustaining foods ever discovered! The Tarahumara people, however, were maintaining the use of Chia seeds that has a long history of use amongst the great civilizations of Meso-America.</p>
<p>Chia was one of the staple food crops of the great Aztec people! It was held to be equally valuable to their diets as the famous beans and corn. In the 1500’s when Hernando Cortez and the Spanish conquistadores arrived in modern day Mexico, they were astounded by what they found. The capital city of the Aztec Empire, Tenochtitlan (modern day Mexico City), supported a population of 200,000 people. This was double the population of comparable Europeans cities such as London and Rome.</p>
<p>Without a doubt, the Aztecs were a highly developed, sophisticated civilization. The Aztecs had a deep knowledge of plants used for food and health and were able to produce a surplus of food to feed the blossoming of their people. The agricultural system of the Aztecs was brilliant, and their civilization was one of the world’s main centres for the domestication of plant species we know today. It is very important to note that Chia was one of their most valued staple foods!</p>
<p>It is one of the curious fates of food that Chia has fallen into obscurity for so long. The Spanish Conquest was the principal reason for this! Just as with Quinoa in the Inca Lands to the South, the dominant Spanish culture forced their own system of agriculture upon the land. This had to do with the demand of European markets for traditional “wholesome” foods, but also, the deliberate elimination of crops such as Chia served to undermine the culture of the conquered people. The close relationship of Chia with the Aztec religion made it especially vulnerable.</p>
<p>It is sobering to note that at the time of conquest, Meso-America as a whole supported a thriving population of 11 million. Today, 12.5 million people are living there in hunger!</p>
<p>&nbsp;</p>
<h5><b>Traditional Chia Preparations and Folk Medicine</b></h5>
<p>Chia belongs to the sage family of plants. It&#8217;s latin name salvia literally means &#8220;to save&#8221; or &#8220;saviour&#8221;. As we shall see, it bears this name for good reason.</p>
<p>The principal method by which Chia was consumed by the meso-american people was as a refreshing beverage. Chia is remarkable in that when it is soaked in water, it becomes gelatinous. There exists today in Mexico the drink called &#8220;Chia Fresca&#8221;.</p>

<p><span style="text-decoration: underline;"> Chia Fresca</span></p>
<p>&nbsp;</p>
<ul>
<li>Take one tablespoon of chia seeds and stir it into a cup of water, orange juice, lemon water, lime water or any liquid you wish. Add Honey if desired. Let the Chia soak in the liquid for roughly 5-10 minutes, even overnight, and then drink it as a magnificent energizing beverage</li>
</ul>
<p>&nbsp;</p>
<p>This was one method to consume chia seeds but the Aztecs used this versatile seed in many ways. They would grind it into a flour with amaranth to create a dough known as &#8220;tzoalli&#8221;. They would press the oil from chia seeds to be used as a food as well as for painting. One of the most delicious recipes that I have come across is a savoury porridge they called Chianatolli.</p>

<p>&nbsp;</p>
<ul>
<li>Soak your chia seeds in a moderate amount of water. You want the chia to have a texture similar to porridge. traditionally they would mix corn into this mixture. Today, we will mix in a special heirloom purple corn extract powder into our porridge to have the essence of maiz in our meal. Now you can literally season the porridge any way you wish! Chiles and pumpkin seeds were popular back then. It is now ready to be served as a delicious savoury dip to accompany for example toasted Sprouted corn tortillas, or enjoyed on its own. Can be served as a warm food as well.</li>
</ul>
<p>Today, in keeping with the spirit of Chia seeds, we will be serving up our chia seeds with a modern ingenious use: as a dehydrated cracker. Chia seeds are essential in modern raw cracker recipes as their gelatinous goo helps all the ingredients you wish to use in your crackers bind together.</p>

<p><span style="text-decoration: underline;"> Sprouted Chia Crackers</span></p>
<p>&nbsp;</p>
<ul>
<li>Soak your chia seeds with enough water to reach a consistency similar to the porridge recipe above. Too much water and your chia crackers will be too thin. Add whatever spices or ingredients that you can imagine! Be creative! Decorate your crackers or make fun shapes out of them. Spread your mixture thinly on your dehydrator sheets and dry for 6-8 hours on one side before flipping them, and drying them until they are ready, usually another 6-8 hours!</li>
</ul>
<p>&nbsp;</p>
<p>Chia seeds are incredibly versatile: Add them to smoothies, guacamole, salsa, soups, quinoa etc, etc. anything you dream can be nutritionally enhanced by the addition of chia seeds! They will give your meal an extra nutritional boost that will leave you feeling good!</p>
<p>&nbsp;</p>
<p>It is interesting to explore the various ways the meso-americans used chia as a medicine as well as a food:</p>
<p>&nbsp;</p>
<ul>
<li>Colds and Sore throats: Swallowing the gelatinous mass serves as emollient, soothes inflamed mucuous membranes and cools fever</li>
</ul>
<ul>
<li>Ease Childbirth and Fertility Food: Native American Women were fed additional Chia seeds to ease childbirth. By eating it regularly while pregnant, they assured their babie&#8217;s health: OMEGA OILS are essential for the development of brain, central nervous system and retina as we shall see.</li>
</ul>
<ul>
<li>Poultice for wounds to draw out infection and Cleansing sweat glands for hunting: The gelatinous mass of Chia was applied as a poultice wrapped in a cloth upon the affected area overnight.</li>
</ul>
<ul>
<li>Prostate Problems: old indian men would consume a tablespoon of soaked chia a day to relieve problems associated with enlarged prostate</li>
</ul>

<h5 style="text-align: justify;">For good reason, gathering spring water has become increasingly popular as more and more people experience the undeniable benefits of consuming pure, clean, living water. Wild water is of course found in wild places, and with the increased popularity comes increased traffic and potential for damage to sensitive ecosystems in which springs are found.</h5>
<h5>Here are 8 tips to help you maintain right relationship with your water source.</h5>
<p>&nbsp;</p>
<p><strong>Go Lightly</strong></p>
<p>Springs are often found in wild places &#8211; in forests, in caves or along roads and highways on the edges of forests. Sometimes, they&#8217;re found on or near private land, protected ares, or may be the water source for small communities. Wherever you find a spring, go lightly and with the greatest respect.</p>
<p>Clean water is under threat in Canada and around the planet. Springs are vibrant ecosystems, micro-climates full of life and wonder. Help care for and maintain these places for all who visit &#8211; whether it&#8217;s for next month, next year or the next seven generations, do everything you can to be a good steward and strong guardian of water, forests and all life.</p>
<p>&nbsp;</p>
<p><strong>Keep it Clean</strong></p>
<p>It&#8217;s a whole new era, yet littering occurs and it&#8217;s always sad to see a piece of plastic in otherwise pristine wilderness.</p>
<p>Avoid leaving anything behind at the spring, like bits of plastic, bottle caps, wrappers, broken glass.</p>
<p>Whether intentional or not &#8211; please don&#8217;t litter &#8211; and if you see trash left behind &#8211; please pick it up and recycle appropriately.</p>
<p>&nbsp;</p>
<p><strong>Know Your Source</strong></p>
<p>Before you consume spring water be sure it is safe &#8211; ask around, talk with locals or other spring water enthusiasts and consult <a href="http://www.findaspring.com/" target="_blank">findaspring.com</a> to ensure the water you&#8217;re collecting and drinking is not contaminated and is in fact a spring and not a stream or river (which may provide you with giardia, instead of vibrant health).</p>
<p>Consider getting a <a href="http://www.surthrival.com/portfolios/spring-water-tds-meter/" target="_blank">TDS Meter</a> &#8211; a device used to test the <a href="http://en.wikipedia.org/wiki/Total_dissolved_solids" target="_blank">Total Dissolved Solids</a> in a solution. Generally speaking a lower TDS signifies a more pure drinking water.</p>
<p>&nbsp;</p>
<p><strong>Be Safe</strong></p>
<p>Whether you&#8217;re collecting spring water in a secret spot in the woods, alongside a road or highway, or at a more developed location &#8211; be safe, be aware, and use common sense when gathering spring water.</p>
<p>Conditions can be slippery, muddy and unstable and water can be surprisingly and deceptively heavy. Trust me &#8211; you do not want to slip and fall while carrying a six-gallon glass carboy full of water.</p>
<p>Know your surroundings. Take your time.</p>
<p>Be aware of spring-specific warnings: A spring near Port Alberni, BC warned of cougar sightings in the area at dusk. Good advice when we found ourselves taking longer than expected and were deeper off the path than we first thought. Check <a href="http://www.findaspring.com/" target="_blank">findaspring.com</a> for updated information on springs around the world.</p>
<p>&nbsp;</p>
<p><strong>Be Smart</strong></p>
<p>Water is heavy. Rocks are slippery. Roads are dangerous. Glass breaks.</p>
<p>Use your ingenuity when gathering spring water. If you&#8217;re hesitant to carry glass &#8211; collect in plastic bottles and transfer to glass at a safe location. Use sturdy crates, or carrier straps and handles to help ease the load.</p>
<p>&nbsp;</p>
<p><strong>Be Clear</strong></p>
<p>Sometimes springs may be in or near a Provincial or National Park, in which case you may be approached by a Park Warden, or a Conservation Officer. Taking anything &#8211; whether it&#8217;s a rock, plant or artifact from Provincial or National Parks is against Regulations. Technically these regulations also include water. Collecting spring water for commercial use is prohibited &#8211; but gathering spring water in Parks for personal use is often seen as a &#8220;grey area&#8221;.</p>
<p>However, it&#8217;s no secret that park wardens themselves know very well the delicious benefits of spring water, and you may often find common ground.</p>
<p>In a recent case in Alberta, there were concerns regarding the exact location of the Canmore spring, and whether or not it was located inside Provincial Park boundaries. Several spring water enthusiasts were met with warnings and potential fines as a result of the confusion. To help clear things up, a gracious spring water guardian teamed up with a park warden, and using GPS determined the spring to be in fact outside of Park boundaries.</p>
<p>Working together and communicating in a courteous, friendly and clear manner benefits everyone.</p>
<p>&nbsp;</p>
<p><strong>Water is Precious, Time is Infinite</strong></p>
<p>Yes, we generally live fast-paced-ultra-busy-fully-on-intense-lives these days &#8211; no doubt about it. However, gathering spring water can encourage a practice of slowing and flowing.</p>
<p>Make a day of it, make it special.</p>
<p>Remember, springs are an abundant source of Negative ions &#8211; negatively charged electric atoms and molecules that do a whole lot of beautiful things for you &#8211; like relieve stress, cast away depression, boost your immunity, and lighten your mood.</p>

<p><strong>Give Thanks</strong></p>
